Access is not inventory. It is a set of long relationships with houses, clubs, promoters, chefs and directors, kept warm over years and used sparingly.

We ask for what a household actually wants — the second night rather than the opening, the corner table rather than the centre of the room, the entrance that avoids the photographers.

We say no when a request would spend a relationship badly. That restraint is the reason the answer is usually yes.
